Aloo Bhujia (Traditional Potato Hash with a Twist)

I have fond memories of Sunday morning breakfast with my family. My mom would make the 4 staples, Paratha, Omelet, Ground Beef, and Aloo Bhujia (basically it was traditional potato hash.)

Since my father-in-law had just bought us a 10 pound of bag of potatoes, I decided to try and reinvent the Aloo Bhujia.

Gotta Love Wholesale Potatoes!

Dice the potatoes, peppers and onions.

Diced Potatoes, Peppers and Onions

Gather all the dry ingredients.

Aloo Bhujia Dry Ingredients

Coat the bottom of a pan with olive oil and put in the peppers, onions and minced garlic.

Aloo Bhujia Pepper Onion Minced Garlic

Cook till the onions are translucent. Put in the potatoes, dry ingredients and coconut milk. Let the mixture simmer on medium heat until most of the coconut milk has evaporated. Add the water, cover and simmer on medium low heat until potatoes are done.

Ingredients

  • 6 potatoes diced
  • ½ peppers diced
  • ½ onions diced
  • 1 tablespoon minced garlic
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon parsley
  • ½ teaspoon basil
  • ½ cup coconut milk
  • ¼ cups water
  • olive oil

Instructions

  1. Dice the potatoes, peppers and onions.

  4. Let the mixture simmer uncovered on med heat until most of the coconut milk has evaporated.
  5. Add the water, cover and simmer on medium low heat until potatoes are done.
